Cranberry Bread & Butter Pudding

Made these a couple of days back after getting inspiration from 3 elements. The recipe sounded easy enough and I had the ingredients needed. You can get the recipe here. However, maybe it was the addition of the dried cranberries but it was rather sweet so I would lessen the amount of sugar the next time I make it. It was a hit with hubby, who before he came to Singapore 12 years ago, had never tasted nor heard of this pudding. Hehe.

What U need:

  • 6 slices Bread
  • Butter for spreading on bread
  • Handful of dried cranberries or any other dried fruit of choice
  • 4 Eggs
  • 100g Sugar
  • 2 cups Milk
  • 1 tsp Vanilla essence
  • Dashes of cinnamon

Method:

  1. Preheat oven to 180C.
  2. Trim the crusts off the bread & spread butter evenly on one side.
  3. Break bread into small pieces onto an oiled 8 inch baking pan.
  4. Sprinkle with cranberries.
  5. Whisk eggs, sugar, milk, vanilla & cinnamon until well mixed.
  6. Pour mixture over bread, ensuring all the bread are soaked with the mixture.
  7. Let it stand for 15mins.
  8. Bake for 45 minutes or until the top springs back when lightly tapped & browned.
  9. Serve warm.

your bread pudding look soft and yummy.I never baked bread pudding b4,must ask hubby if he like it or not.Maybe I try your recipe.Thanks for sharing:)

beachlover - Thanks, although that isn't my recipe. ;) Your hubby might like since he's very ang moh in his tastebuds. :P

daphne - Ya, actually I quite liked how it turned out, and chose to leave the sides on instead of getting rid of them, else doubt I will eat it either cos I do not like bread butter pudding. I just can't get over the mushy bready thingy.

Wow Deb, your bread pudding looks really yummy! The top was so nicely baked..the color was so even.
