Tried out this recipe from Daphne's blog as it is something different from the usual boring plain chocolate chip cookies. It includes both my favourite ingredients - white chocolate and macadamia. :D
I love it, and hubby too was full of praise! He loved the macadamias in them.
Whilst in the oven, they gave off a beautiful caramel-ly fragrance, which was simply divine. I couldn't wait for them to be ready and cool enough to pop into my mouth. You just can't stop at one. ;)
Try this today. You won't regret.
Macadamia and White Chocolate Cookies (makes about 40)
125grams of butter
2 teaspoon of vanilla essence
3/4 cup of brown sugar (maybe can cut down a bit to slightly less than 3/4cup)
1 egg
1 cup of plain flour
1/2 cup of self raising flour
1 cup chopped unsalted roasted macadamias
3/4 cup of rolled oats
200gms white choc bits
Preheat Oven to 180C
Beat butter, eggs, sugar and essence till they become light and fluffy. Fold in flours, nuts, oats and chocolate.
Shape tablespoons of mixture into balls; placed them on lined baking trays. Bake for 15 minutes or till browned slightly. Cool and EAT.
Note to Daphne - how come mine didn't turn out as white as yours? Hehe.

little corner of mine - They aren't exactly cheap here either, but once in a while indulge is fine. :)
daphne - I think maybe it was the flour, come to think of it. I did not use the usual Prima or the local ones I usually do. I bought White Wings I think and I noticed the flour is not as white. Don't think it was the oats.
