This cake has been on my to-do list for a very very long time. I just never felt the urge or rather, there was never a real push factor. Glimpsing a tin of pineapple rings as I walked past a shelf in NTUC, I decided to seize the moment and pick it up.
The tin sat on the kitchen countertop for 3 whole days. In the meanwhile, I had to psych myself to get it done.
I finally did it today! Yippee! But since I don't like maraschino cherries, I used some strawberries to fill in the gaps. As you can see, the red didn't turn out that well.
I used Nigella's recipe which you can find here. The cake is nice, although it doesn't rise all that much. It wasn't too sweet, and was really easy to make. Removing it from the cake tin was also a breeze.
This cake holds a very special place in my heart. During my Secondary school days, a friend and I joined a baking contest organised by my school and we won the second price with our pineapple upside down cake. :D However, I have no idea where that recipe has gone. What a pity.

awww.. that's so sweet d! I can't remember baking that much in sec school..except that I partnered with a great cook and try to do the dishes while she cook for us! LOL
Yes d, hehe. I don't remember that much except them rock buns n the pineapple cake competition and sewing the irritating 3-tier skirt! Wow, u r lucky, ur friend must be a fab cook now! R u still in touch with her? But u have come a long way too and cook so well now, even though you started as a dishwasher muahhahahah.
You won a baking competition in sec school?? wow, I didn't know. Impressed. Most of the stuff my partner & I cooked/baked at school weren't edible..haha..
Daphne-lucky you, both my partner & I were terrible cooks and even worse at sewing!! Most of us couldn't even use a sewing machine!
Ah, mystery solved, I was trying to figure the puzzle out when you told me you bought a can of pineapples, haha...
Your school syllabus definitely more elaborate than mine, I can remember only Rock Buns, hehehh..
I baked that during my secondary Home Science class too! And that was my first and last time I baked one! hehehehe
Shazz - Haha, you didn't know? If not wrong, I still have the glass bowl price somewhere. Goodness I hated sewing! We always got ah ma and aunt to sew for us, remember? ;P
HK Choo - It wasn't the syllabus, it was a competition, so we had to have our own recipes.
