My girl broke out in a rash on Saturday evening after our outing to visit my grandma followed by dinner with the family. It started with this pain on her left ear and she screamed when I was trying to wash her hair in the morning. I found out later that night, that there was eczema right at the top of her ear. No wonder she was in pain! It was scary though, as she was constantly scratching her neck, body and her ears (both) had turned red that evening. However, as we were out, lighting was dim and I hadn't realized that it was bothering her all over. It was only when I showered her again in the evening that I discovered all the rash on her body. I applied cream for her in the affected areas but it didn't help to relieve the itch so she was scratching most of the night, thus it affected my sleep too, worrying about what could be wrong. Thankfully, she was well again in the morning, and not a bother on her.
I decided to prepare a salad dinner for us, as a way to detox our system, hoping that it will clear away whatever toxins that are present within her. For this plate of salad, she got 5 stickers for her reward chart. I think it was great that she almost finished the entire portion of it, leaving just a few leaves of lettuce and the raisins behind. Don't know why, she just wasn't in the mood for raisins. I left out the dressing on hers but I gave her some of it in a separate bowl. She didn't touch that. She preferred hers plain.
For ours, I drizzled some thousand island, not my dressing of choice, I prefer Ranch, but they were out of it at the supermarket. The stuff that went into the salad were butterhead lettuce, Japanese cucumber, tomatoes/cherry tomatoes, fresh corn kernel (very sweet), celery, hardboiled eggs, pasta, cocktail sausages, shredded carrot, raisins and roasted walnut.

Salad and pancakes
We had dinner at Sizzler last evening. It's newly renovated, although the layout still remains the same. We've not visited it in years so decided to go check it out. The salad bar was the most popular choice on the menu, but for a couple of dollars more, you get a main course as well. Princess ordered the chicken nuggets which cost $11.90 and it included a drink. However, she got very excited with the salad offerings that she hardly touched her main course. (Kids size salad bar costs $9.90) What a waste of $$. However, we're not complaining as we were so delighted that she still enjoys the bar. When she was much younger, we went there a couple of times but she's forgotten. Those days, she ate for free. She and daddy made a little face with her salad and she ate everything on her plate & even went back for seconds. Wow! At the end of the meal, she said, 'I had a wonderful dinner!', and you could tell she was happy as she was in a very good mood and prancing around. Haha.

For breakfast I made our favourite pancakes but this time I made them plain and served the fruits on the side. I made half the recipe but there's still batter leftover for tomorrow. An unsuccessful attempt with the hello kitty stencil.

Good Friday Dinner
Came home from church and put together a 'simple yet took lots of time preparing' dinner. Hehe. It took ages to butter the filo pastry which I used to make spinach puffs and being a little short on the spinach, I made the last one for princess with a piece of banana and chocolate chips.
Spinach puffs were made with a spread of Boursin garlic & fine herbs cheese, then topped up with ready creamed spinach, rolled and baked. Simply gorgeous.I also made a salad with butterhead lettuce, celery, Japanese cucumber, corn bits, cherry tomatoes and hard-boiled egg. Tossed them in Ranch dressing & ready to serve.

Roast Beef
Made a roast beef and roasted potatoes, accompanied by an avocado salad with the veg I had in fridge. Bought the purple cabbage some time back but didn't have a chance to use it. It has remained fresh though. Have been wanting to try making an avocado salad since seeing this n this lady(ies) make them. I totally love it. The sesame oil and seeds go so well together with the olive oil, lime, and some black pepper.
